Vider toutes les graines et badigeonner d\u2019huile d\u2019olive l\u2019int\u00e9rieur en faisant quelques fentes dans la chair pour acc\u00e9l\u00e9rer la cuisson. Faire cuire les p\u00e2tissons \u00e0 vide pendant 40 minutes environ. Faire chauffer l\u2019huile d\u2019olive en y incorporant&nbsp;une&nbsp;cuill\u00e8re \u00e0 caf\u00e9 de curcuma et un peu de poivre. \u00c9plucher l\u2019oignon, les \u00e9chalotes et l\u2019ail et les mettre en fines lani\u00e8res dans la po\u00eale, faire cuire 15 minutes en remuant souvent pour ne pas les faire brunir. Laver l\u2019aubergine et la couper en petits morceaux L\u2019ajouter au m\u00e9lange pr\u00e9c\u00e9dent. Laver les poivrons et les couper en petits morceaux apr\u00e8s avoir&nbsp;enlev\u00e9 les p\u00e9pins. Les ajouter au m\u00e9lange pr\u00e9c\u00e9dent. Si n\u00e9cessaire, ajouter un peu d\u2019huile d\u2019olive. Laver les courgettes, les couper en deux puis en morceaux. Les ajouter au m\u00e9lange pr\u00e9c\u00e9dent. Ne pas oublier de m\u00e9langer r\u00e9guli\u00e8rement. Laver la tomate, la couper&nbsp;en morceaux et l\u2019ajouter au m\u00e9lange pr\u00e9c\u00e9dent. Saler, poivrer et v\u00e9rifier l\u2019assaisonnement. Laisser confire \u00e0 feu doux environ 30 minutes (tous les l\u00e9gumes doivent \u00eatre tendres).<\/p>\n\n\n\n<p>Mettre les l\u00e9gumes dans un saladier, y incorporer le persil et la feta.
