Coupez le gingembre en tout petits d\u00e9s. Coupez le beurre en petits morceaux. Lavez et ciselez le persil. Dans un bol, battez les \u0153ufs en omelette.<\/span><\/p>\n<p><span style=\"font-family: Calibri; font-size: small;\">Dans une casserole, versez l\u2019eau, ajoutez les d\u00e9s de gingembre, les zestes du citron, 1 pinc\u00e9e de sel et quelques tours de moulin \u00e0 poivre. Faites bouilli 3 mn pour faire r\u00e9duire d\u2019un quart. Ajoutez le beurre morceau par morceau sans cesser de fouetter, puis les jaunes d\u2019\u0153ufs battus. Laissez mijoter 5 mn et mixez. Ajoutez les f\u00e8ves et le persil et faites cuire 2 mn \u00e0 feu doux pour r\u00e9chauffer les f\u00e8ves sans faire bouillir.
